Pear Pancakes

I know a Monday morning is not the right time to post a blog about home made brunch, but this weekend was fairly busy, so this is the only chance I have got to post about delicious pear pancake stack with crispy bacon, vanilla and blueberry yoghurt brekky.

Sunday morning, my favourite morning for sleeping late and indulging myself in a nice breakfast. This particular pear pancake recipe is seriously easy, seriously delicious and basically its a great way to do something different with pears!

If you are like me, I would reach for a packet of Jaffa cakes and convince myself that they are part of my daily five- a- day intake, I mean, it has orange bits in them right? I am not one that would choose an apple over biscuit (I wish I was that type of person, life would be so much easier!) This particular recipe puts some of those demons to rest, it allows you to throw your fruit, in this case pears, into the pancake batter, and before your know it, you are on your way to a (semi) healthy breakfast!

Ok, so these pear pancakes go really well with crispy bacon, to add a little lift we also took some plain yoghurt and scrapped out a vanilla pod to stir through, before adding fresh blueberries. We topped our pear pancake stack with crispy bacon, vanilla and blueberry yoghurt, and a good squirt of maple syrup to finish it off, serve with good strong coffee and a side order of fresh orange juice. Do I feel guilty?…slightly, but was it worth it? definitely!

What do I need?

Buttermilk Pear Pancakes

  • 2 cups plain flour
  • 2 level tsp baking powder
  • quarter cup caster sugar
  • 3 eggs
  • 3 cups buttermilk or 2 cups yogurt mixed with 1 cup water
  • 50g butter melted
  • 2 large ripe pears
  • Juice of half lemon
  • A couple of teaspoons of caster sugar

Sides Orders

  • Packet of bacon ( any type you prefer)
  • Tub of plain yoghurt, vanilla pod, and punnet of fresh blueberries.

What do I do?

  • Sift the flour and baking powder in a large bowl
  • Stir in sugar
  • In a separate bowl whisk together buttermilk/yogurt and water along with eggs and melted butter
  • Gradually whisk the buttermilk mixture into the dry ingredients until you have a smooth, thick batter
  • Peel and thickly slice pears, sprinkle with lemon juice and sugar
  • Melt a little butter in a non-stick frying-pan and saute a slice of pear on both sides
  • When the pear is slightly caramelised, pour over half a ladle of the pancake batter. Cook on both sides until golden brown
  • Serve with crispy bacon,maple syrup and a good dollop of vanilla &blueberry yoghurt!
