Meatball Carbonara

Meatball Carbonara,  is there anything more comforting that a steaming bowl of creamy pasta? how about creamy pasta with meatballs?  how about creamy pasta with SAUSAGE meatballs.   For those of you on a diet,  please look away now.   For those of you who say “sod the diet”  please continue to read on.

Spaghetti Carbonara with sausage meatballs,  is a seriously tasty little pasta number.   It includes lemons, parsley, sausage meat, eggs, spaghetti, courgettes, parmesan  and oh yes,  double cream.

What Do I Need?

  • 3 Italian style sausages
  • 2 rashers (smoked streaky bacon)
  • 250g Dried spaghetti
  • 2 large eggs
  • 1 medium courgette ( or if you are not partial to courgette, try adding mushrooms, or broccoli)
  • 100ml  double cream
  • 50g Parmesan cheese
  • 1 small bunch of flat leaf parsley,  or Basil
  • Olive oil
  • Sea salt
  • Black pepper

What do I do?

  • Boil your kettle, pour into saucepan,  salt the water and when boiled put in your spaghetti
  • Slice courgettes lengthways, (discard the ends) slice the courgettes into quarter chunks
  • Heat a large frying pan over a medium heat and add a splash of olive oil
  • Slit the sausage skins lengthways with a sharp knife, and squeeze the meat out.  Wet your finger tips then roll the sausage meat into little balls, you want to get 5 or 6 balls from each sausage.
  • Then, separate your eggs and add the yolks to a mixing bowl with cream, beat with a fork until smooth.   Finely grate lemon zest and half of your Parmesan into the bowl and beat again. set aside.
  • Add the meatballs to the hot pan and fry for 6 mins (approx) until golden brown all around.  Meanwhile chop your bacon into small strips.
  • Add bacon and courgettes to the frying pan with the meatballs, keep cooking until bacon is crispy,  then turn off heat.
  • While bacon is cooking, finely chop parsley and add it to the egg mixture in the bowl.
  • When your spaghetti is cooked, scoop out a cupful of the starchy water and set aside, drain off the other water.
  • Using a tongs add the hot drained spaghetti to the mixing bowl of the egg mixture.  The heat of the cooked spaghetti will start to cook and thicken the eggs in the mix.
  • Tip the spaghetti and egg mixture into the frying pan of bacon courgettes and sausage,  toss everything together quickly, adding a splash of starchy water to loosen mix
  • Serve with a sprinkling of chopped parsley and shaved Parmesan.
