Pancake Tuesday

So the challenge lay ahead of me this morning when I got up and faced the day. Its the same  dilemma that faces me every year, the big question that had to be asked to go “Savoury or Sweet?” this pancake Tuesday?

This year I went with a savoury pancake. A zingy, zesty, spicy pancake. This is the perfect pancake recipe to have as a hearty dinner on a cold pancake Tuesday night.  The best thing of all its also easy on the calorie count,  winning!

What do I need?

  • 1 cup of Self Raising Flour
  • 1 Cup of semi-skimmed milk
  • 1 large egg
  • 1 green chilli
  • 40g of grated cheddar
  • pinch of salt and pepper
  • 1 large ripe Avocado
  • Bunch of coriander
  • 1 lime
  • 2 large Ripe tomatoes
  • 1 packet of Bacon
  • 1 tablespoon of maple syrup

What do I do?

  • Put flour, milk and egg into large bowl and whisk
  • Chop chilli (deseeded) and grate cheese, add both to the pancake mix, stir well.
  • Heat a large frying pan over medium heat
  • Add your bacon and cook gently, when almost done drizzle over maple syrup and set aside.
  • Meanwhile, slice up your avocado (remember to remove the stone) and put into a separate bowl
  • Chop coriander and add to your a sliced avocado
  • Chop your tomatoes add to your avocado mix
  • squeeze over juice of half a lime over your avocado mix, set aside.
  • heat a smaller frying pan, add a drop of olive oil to coat the base  and add your pancake batter one ladle full at a time when the pan is hot and ready, you will know when its time to flip your pancake when bubbles appear on the surface.
  • Repeat the process until you have used all your pancake batter.

Serve  your pancakes with sour cream and heaped  topping of your Avocado salsa and crispy bacon.
