Pork n’ Pear Pot Roast

I have recently discovered a whole new way of cooking, its convenient, its easy and most importantly doesn’t use many pots and pans which also saves on the washing up! bonus! 🙂

Pork.  It’s a  difficult one.  If I am honest I would say that pork is my least favorite of meats,  historically I found it to be dry and a bit ‘meh’, (however this could have been down to the way my Mother cooked it),  but now I stand corrected and fully converted after trying this recent recipe.

Lorraine Pascales “Home Cooking Made Easy” cookbook provides a roasted pork with pears dish that is easy and quite frankly, ruddy delicious!  Ok, ok, it takes 6 hrs to slow cook the beast,  but let me tell you its worth it when its done.   We made the fatal error of trying this recipe mid-week, and ended up eating dinner at 10.30pm on a Thursday night! (never to be repeated I might add!) so,   learn from my experience and the next time you are in a fluster over family coming round to Sunday dinner, get this roasted shoulder of pork in the oven early,  accompanied with  roasted shallots, carrots, potatoes and pears, they are all bunged into ONE dish, which makes cooking it easy on the stress and the washing up easy on the hands!

*Note: The crackling is the winning inclusion in this recipe, scored and rubbed with fennel seeds, salt, pepper, and olive oil, when it re-emerges from the oven 6 hrs later, it is a very welcome dinner guest!

    • Yes, pork is a difficult one, however I am definitely “pro pork” now. Fennel is a great match with pork (one that I probably wouldn’t have thought about using, but it works wonderfully with this dish!) thank you for your feedback! really appreciate it!
